Pizzolato Merlot or Merlot Piave DOC “Senza Solfiti” from Cantina Pizzolato enjoys an intense dark red. It is dry, full-bodied, tannic and fruity. This merlot has an aroma of peasant floreal notes of violet, distinctly fruity with aromas of blackberry. There even delicate nuances of pepper.
The vineyards are situated on the plains and hillsides near the Piave river that flows through the rich flourishing countryside in the north of Treviso. The organically grown Merlot grapes are harvested by hand late in August.
A classic red vinification process is undertaken. Fermentation occurs in contact between the skins and the must for 6-10 days in order to extract more tannins from the skins. After fermentation the liquid and any solid parts are separated. The skins are then used for Grappa to ensure that little is wasted. The wine will then refine in steel tanks before it is bottled.
Matches: great with pasta dishes.
Serve at 14 – 16° C.
As with all wines on this website, this wine has been made without animal products. This is not the case with so many wines that are commonly on sale in the UK. Far too many wines have animal products used as a so-called production aid; they will often have a large array of chemical additives as well. Have a look at our page on additives allowed in wines. Many vegan wines are also organic or better still bio-dynamically grown. The care taken in growing the grapes and making the wine comes through in the taste of the final product. This is a vegan wine.
